  • 2 lbs Beef Chuck Roast
  • 1 can (13.5 oz) Coconut Milk
  • 3 tablespoons Curry Powder
  • 4 cloves Garlic, minced
  • 1 tablespoon Fresh Ginger, grated
  • 1/4 cup Soy Sauce
  • Juice of 1 Lime
  • 1 medium Onion, chopped
  • 1 tablespoon Vegetable Oil
  • Salt and Pepper to taste

Instructions

  1. Sear the beef chuck roast in a large skillet over medium-high heat with vegetable oil until golden brown on all sides.
  2. Remove the beef and sauté onions, garlic, and ginger until softened.
  3. Stir in curry powder and a splash of coconut milk; cook for an additional minute.
  4. Return the beef to the pot along with the remaining coconut milk, soy sauce, lime juice, salt, and pepper. Bring to a simmer.
  5. Cover and reduce heat to low; cook for 4–6 hours until the beef is fork-tender (or use a slow cooker).
  6. Shred the beef using two forks and return it to the sauce before serving.
