  • 1 lb Russet potatoes, peeled and diced
  • 3 cups fresh kale, chopped
  • 3 tbsp unsalted butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream

Instructions

  1. Prepare vegetables by peeling and dicing potatoes and chopping kale.
  2. In a large pot over medium heat, melt butter; sauté onions until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Add diced potatoes and vegetable broth; bring to a boil. Reduce heat to simmer and cover for about 15 minutes until potatoes are tender.
  4. Stir in chopped kale and let it wilt for the last 5 minutes of cooking.
  5. Blend the soup until smooth using an immersion blender or standard blender. Return to low heat if necessary.
