  • 2 lbs starchy potatoes (Russet or Yukon Gold)
  • 1 cup finely chopped green cabbage
  • 1/2 cup sliced scallions (green onions)
  • 4 tbsp unsalted butter
  • 1/2 cup whole milk or heavy cream

Instructions

  1. Peel and chop the potatoes into uniform pieces. Place in a large pot with cold water, bring to a boil over medium-high heat, and cook until tender (15-20 minutes).
