- 2 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 1 medium carrot, diced
- 1 celery stalk, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed San Marzano tomatoes
- 2 cups vegetable broth
- 2 tsp dried oregano
- 2 tbsp balsamic vinegar
- Salt & pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery; sauté for 5 minutes until softened.
- Stir in garlic; cook for another minute until fragrant.
- Add lentils, crushed tomatoes, vegetable broth, oregano, and balsamic vinegar. Combine thoroughly.
- Bring to a boil, then lower heat and simmer uncovered for 30-35 minutes until lentils are tender and sauce thickens.
- Season with salt and pepper as needed. Serve hot over pasta or zoodles, garnished with Parmesan cheese or nutritional yeast.
