Ingredients

  • 1 cup brown or green lentils
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed San Marzano tomatoes
  • 2 cups vegetable broth
  • 2 tsp dried oregano
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery; sauté for 5 minutes until softened.
  2. Stir in garlic; cook for another minute until fragrant.
  3. Add lentils, crushed tomatoes, vegetable broth, oregano, and balsamic vinegar. Combine thoroughly.
  4. Bring to a boil, then lower heat and simmer uncovered for 30-35 minutes until lentils are tender and sauce thickens.
  5. Season with salt and pepper as needed. Serve hot over pasta or zoodles, garnished with Parmesan cheese or nutritional yeast.
