- 1 1/2 cups fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
- In a small bowl, beat the softened cream cheese with 1/4 cup of sugar until smooth; set aside.
- In a large mixing bowl, whisk together the flour, baking powder, salt, and remaining sugar (3/4 cup).
- In another bowl, combine the eggs, milk, and melted butter; pour this mixture into the dry ingredients and stir until just combined.
- Gently fold in the blueberries until evenly distributed.
- Spoon half of the batter into each muffin cup. Add a dollop of cream cheese filling on top of each muffin followed by covering with remaining batter.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean. Allow cooling before serving.
