  • 1 cup pork lard or vegetable shortening (softened)
  • 1 cup chicken broth (from cooked chicken)
  • 2 cups cooked, shredded chicken
  • 1 pound tomatillos (husked and rinsed)
  • 1/4 cup fresh cilantro (chopped)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • Juice of 1 lime
  • Additional salt to taste
  • Corn husks (soaked in warm water)

Instructions

  1. Prepare the green sauce by boiling tomatillos until soft, then blend with cilantro, garlic, onion, lime juice, and salt until smooth.
  2. Cook the chicken by simmering it in water with onion, garlic, and salt until fully cooked. Shred once cooled.
  3. Make the masa dough by mixing masa harina with baking powder and salt. Cream together lard until fluffy; gradually mix in masa mixture and broth until dough-like.
  4. Assemble tamales by spreading masa on soaked corn husks, adding shredded chicken and green sauce before folding.
  5. Steam tamales upright in a steamer pot for 1 to 1.5 hours or until masa separates easily from husk.
  6. Serve with additional green sauce if desired.
