- Corn husks (soaked in warm water)
Instructions
- Prepare the green sauce by boiling tomatillos until soft, then blend with cilantro, garlic, onion, lime juice, and salt until smooth.
- Cook the chicken by simmering it in water with onion, garlic, and salt until fully cooked. Shred once cooled.
- Make the masa dough by mixing masa harina with baking powder and salt. Cream together lard until fluffy; gradually mix in masa mixture and broth until dough-like.
- Assemble tamales by spreading masa on soaked corn husks, adding shredded chicken and green sauce before folding.
- Steam tamales upright in a steamer pot for 1 to 1.5 hours or until masa separates easily from husk.
