  • 1.5 lbs bone-in chicken pieces (thighs or drumsticks)
  • 2 cups basmati rice
  • 1 large onion, chopped
  • 2 medium tomatoes, diced (or 1 can diced tomatoes)
  • 1 bell pepper, chopped (any variety)
  • 3 tablespoons kabsa spice mix
  • 4 cloves garlic, minced
  • 4 cups chicken broth or water
  • Salt and pepper to taste
  • 3 tablespoons vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Rinse basmati rice under cold water until clear. Soak for 30 minutes, then drain.
  2. In a large pot over medium heat, heat oil and sauté onions until translucent. Add garlic and cook for another minute.
  3. Brown chicken pieces on all sides in the pot; season with salt and pepper. Remove chicken and set aside.
  4. Add tomatoes and bell peppers to the pot along with kabsa spice mix; cook for about five minutes until softened.
  5. Stir in soaked basmati rice and four cups of broth; mix gently.
  6. Return chicken to the pot, cover, reduce heat to low, and simmer for 25-30 minutes until rice is cooked and liquid is absorbed.
