Ingredients
- 1 cup long-grain rice (uncooked)
- 1 medium cucumber (chopped)
- 1 cup cherry tomatoes (halved)
- ½ red onion (finely diced)
- 1 bell pepper (diced)
- ¼ cup fresh parsley (chopped)
- ¼ cup fresh cilantro (chopped)
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt & pepper to taste
Instructions
- Rinse rice under cold water until clear. In a pot, combine rice with 2 cups water and a pinch of salt. Bring to boil, then reduce heat to low, cover, and simmer for 15-20 minutes until absorbed. Let cool.
- While rice cools, chop cucumber, cherry tomatoes, red onion, and bell pepper. Add to a large mixing bowl.
- Finely chop parsley and cilantro; add to the vegetable bowl.
- Whisk lemon juice, olive oil, salt, and pepper in a small bowl.
