  • 1 lb tomatillos, husked and rinsed
  • 1 cup fresh cilantro, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 3 cups masa harina (corn flour)
  • 1 cup lard or vegetable shortening
  • 1 tsp salt (plus more for seasoning)
  • 3 cups chicken broth (or vegetable broth)
  • Corn husks (for wrapping)

Instructions

  1. In a large pot, cook the chicken with water and seasonings until fully cooked. Shred once cooled.
  2. Blend tomatillos, cilantro, onion, garlic, lime juice, and salt until smooth to create the verde sauce; set aside.
  3. Beat lard in a bowl until fluffy. Gradually mix in masa harina and salt. Slowly add chicken broth until you achieve a spreadable dough.
  4. Soak corn husks in warm water to soften them. Spread masa dough on each husk, top with shredded chicken and verde sauce before folding tightly.
  5. Steam assembled tamales upright in a steamer basket over boiling water for about 1-1.5 hours until cooked through.
  6. Serve warm with sour cream or additional verde sauce.
