- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup granulated sugar (divided)
- 16 oz cream cheese, softened
- 3 large eggs, at room temperature
- 1 tsp vanilla extract
- Whipped cream for topping
- Crushed candy canes for decoration
Instructions
- Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
- In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into the muffin tin cups.
- In a mixing bowl, beat cream cheese until smooth. Gradually add remaining sugar; mix in eggs one at a time followed by vanilla extract.
- Fill each muffin cup with the cream cheese mixture.
- Bake for 18-20 minutes until set around edges and slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
- Top with whipped cream and crushed candy canes before serving.
