Description

Christmas Cheesecake Bites are the perfect bite-sized holiday treat, combining rich cream cheese filling and a buttery graham cracker crust. Each mini cheesecake is topped with festive whipped cream and crushed candy canes, making them a delightful addition to your holiday gatherings. Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 3 large eggs, at room temperature
  • 1 tsp vanilla extract
  • Whipped cream for topping
  • Crushed candy canes for decoration

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with paper liners.
  2. In a bowl, mix graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press into the muffin tin cups.
  3. In a mixing bowl, beat cream cheese until smooth. Gradually add remaining sugar; mix in eggs one at a time followed by vanilla extract.
  4. Fill each muffin cup with the cream cheese mixture.
  5. Bake for 18-20 minutes until set around edges and slightly jiggly in the center. Cool completely before refrigerating for at least two hours.
  6. Top with whipped cream and crushed candy canes before serving.
