- 1 cup (185g) quinoa, rinsed
- 1 cup (150g) cucumber, diced
- 1 cup (150g) cherry tomatoes, halved
- ½ cup (75g) Kalamata olives, pitted and sliced
- ¼ cup (40g) red onion, thinly sliced
- 1 cup (240g) plain Greek yogurt
- 1 clove garlic, minced
- 2 tbsp (30ml) olive oil
- Juice of 1 lemon
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Marinate Chicken: In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add chicken and marinate for at least 15 minutes.
