  • 1 can (13.5 oz) coconut milk
  • 1 cup basmati or jasmine rice
  • 3 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Salt and pepper, to taste
  • 2 tablespoons cooking oil

Instructions

  1. In a large pot, heat the oil over medium heat. Sauté garlic and ginger until fragrant (1-2 minutes).
  2. Add chicken thighs; cook for about 5-7 minutes on each side until golden brown.
  3. Pour in coconut milk and vegetable broth; stir to combine.
  4. Add rice; bring to a gentle boil, reduce heat to low, cover, and simmer for about 20 minutes until rice is cooked.
  5. Remove from heat and let sit covered for an additional 5 minutes.
  6. Squeeze lime juice over the top and garnish with cilantro before serving.
