- Red bell pepper, seeds removed and cut into 1‑inch pieces
- Yellow bell pepper, cut into 1‑inch pieces
- Green bell pepper, cut into 1‑inch pieces
- Orange bell pepper, cut into 1‑inch pieces
- Red onion, cut into wedges
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp garlic powder
- ¼ tsp cayenne pepper
- Salt and pepper to taste
- Handful fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Preheat grill to medium‑high (375‑400°F).
- Whisk olive oil, lime juice, soy sauce, smoked paprika, cumin, chili powder, garlic powder, cayenne, salt, and pepper.
- Toss chicken cubes in the bowl and marinate 10‑15 minutes.
- Thread chicken, peppers, and onions onto soaked wooden or metal skewers.
- Brush skewers with leftover marinades.
- Grill skewers 4‑5 minutes each side, turning occasionally.
- Let rest 2 minutes, sprinkle cilantro, and serve with lime wedges.
