  • 1 lb flank steak or sirloin, thinly sliced
  • 4 cups cooked day-old rice
  • 4 tablespoons soy sauce
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 2 green onions, chopped
  • 2 large eggs
  • 2 teaspoons sesame oil
  • 2 tablespoons vegetable oil (for cooking)

Instructions

  1. Prepare all ingredients: Slice the beef and chop the vegetables.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Sear the beef slices for about 2-3 minutes per side until browned; remove and set aside.
  3. Add another tablespoon of oil if necessary, then stir-fry the vegetables for 3-4 minutes until tender-crisp.
  4. Add the cooked rice to the pan and stir-fry for about 2 minutes to heat through.
  5. Pour in soy sauce while stirring continuously, then add the cooked beef back into the mix.
  6. Create a well in the center of the rice mixture, crack in two eggs, and scramble until fully cooked. Drizzle with sesame oil before tossing everything together.
