  • 1 cup sweet corn (fresh or canned, drained)
  • 1 cup jasmine rice (or brown rice)
  • ½ medium red onion (finely chopped)
  • 2 tbsp lime juice
  • ¼ cup fresh cilantro (chopped)
  • 2 tbsp taco seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by chopping the chicken, rinsing the corn, and finely chopping the onion.
  2. In a large skillet over medium heat, add olive oil and let it heat up. Add diced chicken seasoned with taco seasoning and sauté until golden brown and fully cooked (about 6-8 minutes).
