- 1 lb sausage (Italian or smoked)
- 1 cup brown or green lentils
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken or vegetable broth
- 1 tsp dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, drizzle olive oil and sauté onions, carrots, celery, and minced garlic until softened (about 5 minutes).
- Add sliced sausage to the skillet and cook until browned.
- Transfer all sautéed ingredients to your slow cooker along with rinsed lentils and diced tomatoes.
- Pour in enough broth to cover all ingredients by about an inch. Stir in thyme, bay leaves, salt, and pepper.
- Set the slow cooker on low for 6-8 hours or high for 3-4 hours until lentils are tender.
- Before serving, remove bay leaves and adjust seasoning as needed.
