  • 1 lb sausage (Italian or smoked)
  • 1 cup brown or green lentils
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken or vegetable broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, drizzle olive oil and sauté onions, carrots, celery, and minced garlic until softened (about 5 minutes).
  2. Add sliced sausage to the skillet and cook until browned.
  3. Transfer all sautéed ingredients to your slow cooker along with rinsed lentils and diced tomatoes.
  4. Pour in enough broth to cover all ingredients by about an inch. Stir in thyme, bay leaves, salt, and pepper.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours until lentils are tender.
  6. Before serving, remove bay leaves and adjust seasoning as needed.
