  • 2 medium tomatoes, chopped (or 1 can (14.5 oz) diced tomatoes)
  • 2 cloves garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a skillet over medium heat, sauté the diced onion and bell pepper until soft (about 5 minutes). Add the drained black beans along with cumin and chili powder; cook until heated through (about 3 minutes).
  2. In a pot over medium heat, combine the vegetable broth with chopped tomatoes. Stir in garlic powder and smoked paprika; let simmer for about 10 minutes.
  3. Add corn kernels and zucchini slices to the soup; cook until tender (about another 5 minutes).
  4. Warm the corn tortillas in a separate skillet or directly over an open flame until pliable.
  5. Assemble tacos by spooning filling onto warmed tortillas. Top with diced avocado, cilantro leaves, and any additional toppings like salsa or cheese if desired.
  6. Serve tortilla soup in bowls, garnished with avocado slices and cilantro alongside the tacos.
