  • 1 lb ground beef (80/20)
  • 4 medium Yukon Gold or Russet potatoes, diced (about 2 lbs)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups beef broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs

Instructions

  1. In a large pot or Dutch oven over medium heat, heat a tablespoon of olive oil. Sauté chopped onions until translucent (about 3–4 minutes), then add minced garlic and cook for another minute.
  2. Increase heat to medium-high and add ground beef. Cook until browned (about 5–7 minutes), breaking it apart as it cooks. Drain excess grease if necessary.
  3. Stir in diced bell peppers and cook for an additional 2–3 minutes until softened.
  4. Add diced potatoes and canned diced tomatoes with their juice to the pot. Pour in beef broth until all ingredients are covered.
  5. Season with salt, pepper, paprika, and Italian herbs. Bring to a boil, then reduce heat to low and cover. Let simmer for about 20–25 minutes or until potatoes are tender.
