- 1 medium bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cups beef broth
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian herbs
Instructions
- In a large pot or Dutch oven over medium heat, heat a tablespoon of olive oil. Sauté chopped onions until translucent (about 3–4 minutes), then add minced garlic and cook for another minute.
- Increase heat to medium-high and add ground beef. Cook until browned (about 5–7 minutes), breaking it apart as it cooks. Drain excess grease if necessary.
- Stir in diced bell peppers and cook for an additional 2–3 minutes until softened.
- Add diced potatoes and canned diced tomatoes with their juice to the pot. Pour in beef broth until all ingredients are covered.
- Season with salt, pepper, paprika, and Italian herbs. Bring to a boil, then reduce heat to low and cover. Let simmer for about 20–25 minutes or until potatoes are tender.
