- 2 cloves garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- ¼ cup toasted pine nuts (optional)
Instructions
- Cook pasta according to package instructions until al dente. Reserve about ½ cup of pasta water before draining.
- While the pasta cooks, halve the avocados, remove the pit, and scoop the flesh into a blender or food processor.
- Add minced garlic, lemon juice, olive oil, salt, and pepper to the blender with the avocado. Blend until smooth; add reserved pasta water gradually for desired consistency.
