  • 1 lb ground beef (lean)
  • 1/2 cup Korean BBQ sauce
  • 3 cloves garlic, minced
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons soy sauce
  • 4 cups mixed vegetables (bell peppers, zucchini, carrots), chopped
  • 1 tablespoon sesame oil
  • 3 green onions, sliced (for garnish)
  • Olive oil (for roasting)
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, panko breadcrumbs, minced garlic, soy sauce, Korean BBQ sauce, and sesame oil until just combined.
  3. Form meatballs about 1 inch in diameter and place them on one side of the baking sheet.
  4. Toss mixed vegetables in olive oil, season with salt and pepper, and arrange them on the other side of the baking sheet.
  5. Bake for 20-25 minutes until meatballs are cooked through (internal temperature of 160°F or 70°C) and vegetables are tender.
  6. Garnish with sliced green onions before serving.
