- 1/2 cup Korean BBQ sauce
- 3 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- 2 tablespoons soy sauce
- 4 cups mixed vegetables (bell peppers, zucchini, carrots), chopped
- 1 tablespoon sesame oil
- 3 green onions, sliced (for garnish)
- Olive oil (for roasting)
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix ground beef, panko breadcrumbs, minced garlic, soy sauce, Korean BBQ sauce, and sesame oil until just combined.
- Form meatballs about 1 inch in diameter and place them on one side of the baking sheet.
- Toss mixed vegetables in olive oil, season with salt and pepper, and arrange them on the other side of the baking sheet.
- Bake for 20-25 minutes until meatballs are cooked through (internal temperature of 160°F or 70°C) and vegetables are tender.
- Garnish with sliced green onions before serving.
