  • 8 oz rotini or penne pasta
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn kernels (fresh or canned)
  • 1 cup bell peppers (mixed colors), diced
  • ½ cup fresh cilantro, chopped
  • ¼ cup lime juice
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the bell peppers and drain the black beans and corn.
  3. In a bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
  4. In a large bowl, combine cooked pasta, black beans, corn, bell peppers, and cilantro. Drizzle with dressing and toss until combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.
