- 8 oz rotini or penne pasta
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn kernels (fresh or canned)
- 1 cup bell peppers (mixed colors), diced

- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the bell peppers and drain the black beans and corn.
- In a bowl, whisk together lime juice, olive oil, cumin, chili powder, salt, and pepper.
- In a large bowl, combine cooked pasta, black beans, corn, bell peppers, and cilantro. Drizzle with dressing and toss until combined.
- Chill in the refrigerator for at least 30 minutes before serving.
