  • 4 boneless, skinless chicken breasts
  • 1 cup fresh apple cider
  • 1/4 cup brown sugar
  • 2 garlic cloves, minced
  • 2 sprigs fresh thyme
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Grease a baking dish and season chicken with salt and pepper.
  2. In a bowl, combine apple cider, brown sugar, garlic, and thyme to create the sauce.
  3. Place chicken in the baking dish and pour the sauce over it.
  4. Bake for 25-30 minutes until internal temperature reaches 165°F (74°C), basting occasionally.
  5. While chicken bakes, mix cabbage and carrots in a bowl with apple cider vinegar, olive oil, salt, and pepper.
  6. Once chicken is done, let it rest for five minutes before serving alongside the slaw.
