- 4 boneless, skinless chicken breasts
- 1 cup fresh apple cider
- 1/4 cup brown sugar
- 2 garlic cloves, minced
- 2 sprigs fresh thyme
- 2 cups shredded red cabbage
- 1 cup shredded carrots
- 3 tbsp apple cider vinegar
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish and season chicken with salt and pepper.
- In a bowl, combine apple cider, brown sugar, garlic, and thyme to create the sauce.
- Place chicken in the baking dish and pour the sauce over it.
- Bake for 25-30 minutes until internal temperature reaches 165°F (74°C), basting occasionally.
- While chicken bakes, mix cabbage and carrots in a bowl with apple cider vinegar, olive oil, salt, and pepper.
- Once chicken is done, let it rest for five minutes before serving alongside the slaw.
