  • 2 large eggs
  • 4 tablespoons vegetable oil (divided)
  • 3 tablespoons soy sauce
  • 1 cup frozen peas and carrots (thawed)
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
  2. Crack the eggs into the pan and scramble until fully cooked. Transfer to a plate and set aside.
  3. Add the remaining oil to the pan, then toss in the peas and carrots. Sauté for 3-4 minutes until tender.
  4. Stir in the cold rice, breaking up clumps with a spatula until coated with oil.
  5. Pour soy sauce over the rice, mix well, then fold in scrambled eggs and chopped green onions before serving hot.
