Instructions
- Preheat oven to 325°F (160°C).
- In a saucepan, heat heavy cream with half of the sugar until just simmering; remove from heat and stir in vanilla.
- Whisk egg yolks with remaining sugar until pale; gradually add hot cream mixture while whisking continuously.
- Stir in sea salt until well combined.
- Pour custard into ramekins placed in a baking dish; fill with hot water halfway up sides of ramekins.
- Bake for 30-35 minutes until edges are set but center is slightly jiggly. Cool on wire rack before refrigerating for at least 4 hours or overnight.
- Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
