Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar (divided)
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • Extra granulated sugar for caramelizing topping

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat heavy cream with half of the sugar until just simmering; remove from heat and stir in vanilla.
  3. Whisk egg yolks with remaining sugar until pale; gradually add hot cream mixture while whisking continuously.
  4. Stir in sea salt until well combined.
  5. Pour custard into ramekins placed in a baking dish; fill with hot water halfway up sides of ramekins.
  6. Bake for 30-35 minutes until edges are set but center is slightly jiggly. Cool on wire rack before refrigerating for at least 4 hours or overnight.
  7. Before serving, sprinkle sugar on top and caramelize using a kitchen torch or broiler.
