  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup Bailey's Irish Cream
  • 1 cup granulated sugar
  • 3 large eggs
  • ¼ cup unsweetened cocoa powder (optional)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a springform pan or line it with parchment paper.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the pan.
  3. Bake the crust for about 10 minutes until lightly golden. Remove and let cool.
  4. In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream and Bailey's Irish Cream until fully blended.
  5. Add eggs one at a time, mixing gently after each addition. Optionally fold in cocoa powder.
  6. Pour filling over the cooled crust. Bake in a water bath for 50-60 minutes or until set around edges but slightly jiggly in center. Let cool before refrigerating for at least 4 hours or overnight.
