- ¾ cup Bailey's Irish Cream
- 1 cup granulated sugar
- 3 large eggs
- ¼ cup unsweetened cocoa powder (optional)
Instructions
- Preheat the oven to 325°F (160°C). Grease a springform pan or line it with parchment paper.
- In a bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the pan.
- Bake the crust for about 10 minutes until lightly golden. Remove and let cool.
- In another bowl, beat cream cheese and sugar until smooth. Mix in sour cream and Bailey's Irish Cream until fully blended.
- Add eggs one at a time, mixing gently after each addition. Optionally fold in cocoa powder.
- Pour filling over the cooled crust. Bake in a water bath for 50-60 minutes or until set around edges but slightly jiggly in center. Let cool before refrigerating for at least 4 hours or overnight.
