- 1/2 cup plain Greek yogurt
- 1/4 cup honey or maple syrup
- 1 cup fresh blueberries (or frozen)
- 2 tsp baking powder
- 2 large eggs (room temperature)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix rolled oats, protein powder, baking powder, and optional spices.
- In another bowl, whisk Greek yogurt, honey or maple syrup, eggs, and vanilla until smooth.
- Combine wet and dry mixtures gently; avoid overmixing.
- Fold in blueberries carefully.
- Fill muffin tins two-thirds full and bake for 18-20 minutes until golden brown and a toothpick comes out clean. Cool briefly before transferring to a wire rack.
