  • 4 slices sourdough or whole grain bread
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons unsalted butter (for spreading)
  • 1 can (28 ounces) whole peeled tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon black pepper (to taste)
  • 1 teaspoon sugar
  • ½ cup heavy cream
  • Fresh basil leaves (for garnish)

Instructions

  1. In a medium pot over medium heat, melt 1 tablespoon of butter. Add chopped onion and minced garlic; sauté until translucent.
  2. Pour in the can of whole peeled tomatoes with their juice. Stir to combine with onions and garlic. Add salt, pepper, and sugar; simmer for 20 minutes on low heat.
  3. Puree the soup until smooth using an immersion blender or regular blender. Return to heat and stir in heavy cream.
  4. Preheat another skillet over medium heat. Butter one side of each slice of bread. Place one slice butter-side down in the skillet; add a mix of cheddar and mozzarella cheese, then top with another slice of bread (butter-side up).
  5. Grill until golden brown on one side (about 3-4 minutes). Flip carefully and cook until both sides are crispy and cheese is melted (another 3-4 minutes).
