- 2 lbs beef chuck, cut into 1-inch cubes
- 1 can (14.9 oz) Guinness beer
- 4 medium carrots, chopped
- 3 medium potatoes, diced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 sprigs fresh thyme (or 1 tsp dried thyme)
- 2 bay leaves
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Prepare the ingredients by cutting the beef into cubes and chopping the vegetables.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides. Remove and set aside.
- In the same pot, sauté onions and garlic until softened.
- Pour in the Guinness beer, scraping up any brown bits from the bottom of the pot. Add beef broth and herbs.
- Return beef to the pot along with carrots and potatoes. Bring to a gentle simmer.
- Cover and cook on low heat for about 2-3 hours or until beef is fork-tender.
