  • 34 lbs chuck roast
  • 4 medium carrots, chopped
  • 3 medium Yukon gold potatoes, chopped
  • 2 large yellow onions, quartered
  • 4 cloves garlic, smashed
  • 2 cups low-sodium beef broth
  • 1 tsp fresh thyme (or 1/2 tsp dried)
  • 1 tsp fresh rosemary (or 1/2 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and cut into large chunks if necessary.
  2. Season the roast generously with salt and pepper. In a skillet over medium-high heat, sear each side for 4-5 minutes until browned.
  3. Place the seared roast in the slow cooker and layer chopped onions, carrots, potatoes, and smashed garlic around it.
  4. Pour beef broth over the ingredients until they are about halfway submerged. Sprinkle thyme and rosemary on top.
  5. Cover and cook on low for approximately 8 hours or high for about 4 hours until the meat is tender.
  6. Remove from slow cooker, let rest for a few minutes before slicing, and serve with vegetables drizzled with broth.
