- 3–4 lbs chuck roast
- 4 medium carrots, chopped
- 3 medium Yukon gold potatoes, chopped
- 2 large yellow onions, quartered
- 4 cloves garlic, smashed
- 2 cups low-sodium beef broth
- 1 tsp fresh thyme (or 1/2 tsp dried)
- 1 tsp fresh rosemary (or 1/2 tsp dried)
- Salt and pepper to taste
Instructions
- Trim excess fat from the chuck roast and cut into large chunks if necessary.
- Season the roast generously with salt and pepper. In a skillet over medium-high heat, sear each side for 4-5 minutes until browned.
- Place the seared roast in the slow cooker and layer chopped onions, carrots, potatoes, and smashed garlic around it.
- Pour beef broth over the ingredients until they are about halfway submerged. Sprinkle thyme and rosemary on top.
- Cover and cook on low for approximately 8 hours or high for about 4 hours until the meat is tender.
- Remove from slow cooker, let rest for a few minutes before slicing, and serve with vegetables drizzled with broth.
