This Coconut Oatmeal Crème Brûlée combines the creamy, silky texture of traditional crème brûlée with the wholesome goodness of oatmeal and the rich flavor of coconut milk. - 1/3 cup oatmeal
- 400 ml coconut milk
- 3 tablespoons sugar
- 2 egg yolks
- 2 peaches
- 1 tablespoon olive oil
- 2 tablespoons honey

Instructions
- Place the oats in a food processor and blend until finely ground to ensure a smooth texture in the crème brûlée.
- Transfer the ground oats into a saucepan, pour in the coconut milk, and add sugar. Heat the mixture over low heat for 5 minutes, stirring frequently but do not bring it to a boil to avoid curdling.
- In a separate bowl, beat the egg yolks. Slowly add the hot oatmeal mixture to the yolks while stirring constantly to temper the eggs and avoid scrambling.
- Pour the combined mixture into molds suitable for baking. Place them in the oven and bake at 100°C (212°F) for 40 minutes until set but still slightly jiggly in the center.
- Once baked and slightly cooled, evenly sprinkle sugar atop each mold. Use a kitchen torch to caramelize the sugar until it forms a golden, crisp crust.
- Cut the peaches in half. Heat olive oil in a pan over medium heat. Fry the peach halves on both sides until they turn amber brown and caramelized.
- Remove the peaches from the pan and immediately drizzle with honey to add sweetness and shine.
- Plate the warm oatmeal crème brûlée alongside the roasted peaches. Enjoy the dessert warm for the best flavor and texture contrast.
