  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ketchup (for glaze)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground beef, panko breadcrumbs, Parmesan cheese, parsley, egg, Italian seasoning, salt, and pepper until just combined.
  3. Shape the meat mixture into a rectangle about 1-inch thick on a clean surface.
  4. Place mozzarella cheese down the center of the meat rectangle, then fold the sides over to encase the cheese completely.
  5. Transfer the stuffed meatloaf to the prepared baking sheet and brush ketchup over the top.
  6. Bake for 60-70 minutes or until internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
