Fluffy pancakes made with ripe bananas, topped with a warm, sautéed cinnamon apple compote for a cozy and satisfying breakfast.

- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 3/4 cup milk
- 2 tablespoons melted butter (plus more for frying)
- 2 medium apples, peeled and diced
- 1 tablespoon butter (for apples)
- 1 teaspoon ground cinnamon
- 1 tablespoon brown sugar
Instructions
- Heat 1 tablespoon of butter in a skillet over medium heat. Add diced apples, cinnamon, and brown sugar. Sauté for 5-8 minutes until tender and glazed. Remove from pan and keep warm.
- In a medium bowl, mash the bananas until smooth.
- Whisk the egg, milk, and 2 tablespoons of melted butter into the mashed bananas.
- Stir in the flour, baking powder, and salt until just combined. Do not overmix.
- Heat a non-stick skillet over medium-low heat and grease with a small amount of butter.
- Pour 1/4 cup of batter per pancake. Cook until bubbles form on the surface and edges look set (about 3 minutes).
- Flip the pancakes and cook for another 2 minutes until golden brown.
- Stack the pancakes and top with the warm cinnamon apples.
