- 2 lbs ground beef
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz) diced tomatoes
- 2 cans (15 oz) kidney beans, drained and rinsed
- 1 cup beef broth
- 3 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper to taste
Instructions
- Brown the ground beef in a large skillet over medium-high heat until fully cooked. Drain the excess fat.
- Add diced onion and garlic to the skillet and sauté for 3-5 minutes until softened.
- Transfer the beef and onion mixture into the slow cooker.
- Stir in the diced tomatoes, kidney beans, and beef broth.
- Add the chili powder, cumin, and smoked paprika, stirring until well combined.
- Cover and cook on Low for 6-8 hours or on High for 3-4 hours.
- Taste and adjust salt and pepper during the final 30 minutes of cooking.
