Ingredients

  • 1 tablespoon baking powder
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 6 strips bacon, cooked crisp and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 large egg
  • 3/4 cup milk
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 375F and grease a 12-cup muffin tin.
  2. Whisk flour, baking powder, sugar, and salt in a large bowl.
  3. In a separate bowl, beat the egg, then stir in the milk and melted butter.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in the chopped bacon, shredded cheddar, and blueberries.
  6. Spoon batter evenly into the muffin cups, filling about 3/4 full.
  7. Bake for 20-25 minutes until tops are golden and a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
