- 1 lb dry pinto beans, rinsed
- 4 slices thick-cut bacon, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 12 oz Mexican lager beer
- 3 cups beef broth
- 1 tsp ground cumin
- 1/4 cup fresh cilantro, chopped
- 1 tbsp lime juice
- Salt and black pepper to taste
Instructions
- Sauté chopped bacon in the Instant Pot or a skillet until crisp. Remove bacon and leave the fat in the pot.
- Add diced onion and jalapeño to the bacon fat and sauté until translucent.
- Pour in the lager beer and scrape the bottom of the pot to deglaze.
- Add rinsed pinto beans, minced garlic, cumin, and beef broth. Stir in the cooked bacon.
- For Instant Pot: Seal and cook on high pressure for 45-50 minutes. For Slow Cooker: Cook on low for 8 hours.
- Perform a natural pressure release for 10 minutes if using the Instant Pot.
- Stir in fresh cilantro and lime juice. Season with salt and pepper to taste.
