Ingredients

  • 4 cod fillets (6oz each)
  • 1 cup cherry tomatoes
  • 1/2 cup Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400F and heat grill to medium-high.
  2. Toss cherry tomatoes with olive oil and salt, roast for 10-12 minutes until burst.
  3. Mix Greek yogurt, dill, lemon juice, and garlic powder in a small bowl; refrigerate.
  4. Pat cod dry and season with salt and pepper.
  5. Grill cod for 4 minutes per side until charred and opaque.
  6. Plate fish with roasted tomatoes and a generous drizzle of dill sauce.
