Ingredients
Scale
- 1 ripe avocado, mashed
- 1/2 cup salsa, drained
- 2 large eggs
- 1/4 cup melted butter
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 2 tablespoons ground cinnamon
- 1/2 cup cold unsalted butter, cubed
Instructions
- Preheat your oven to 375F and line a 12-cup muffin tin with parchment liners.
- In a small bowl, mix 1/2 cup flour, 1/4 cup brown sugar, and 1 tablespoon cinnamon. Cut in 1/2 cup cold cubed butter until the mixture forms coarse crumbs. Refrigerate until ready to use.
- In a medium bowl, mash the avocado until smooth. Whisk in the eggs, melted butter, and drained salsa until well combined.
- In a separate large bowl, sift together the remaining flour, baking powder, and salt.
- Gently fold the wet avocado mixture into the dry ingredients using a spatula. Stir until just combined; do not over-mix.
- Spoon the batter evenly into the muffin liners, filling each about 3/4 full.
- Sprinkle a generous layer of the chilled cinnamon streusel on top of each muffin.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before moving them to a wire rack to cool completely.
