- 1 medium head of green cabbage, shredded
- 3 large carrots, diced
- 3 stalks celery, sliced
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Sauté onions and carrots in olive oil until softened.
- Add garlic and celery, cooking for 3 minutes.
- Deglaze the pot with a bit of broth, scraping the bottom.
- Stir in shredded cabbage and diced tomatoes.
- Pour in the remaining broth and bring to a boil.
- Reduce heat and simmer for 30-40 minutes until cabbage is tender.
