Ingredients

  • 2 cups finely shredded cabbage
  • 1 cup grated carrots
  • 1 cup extra-firm tofu, crumbled
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 24 dumpling wrappers
  • 2 green onions, sliced

Instructions

  1. In a bowl, combine shredded cabbage, carrots, crumbled tofu, soy sauce, half the ginger, and half the sesame oil. Mix well.
  2. Place a tablespoon of filling in the center of each wrapper. Moisten edges with water, fold, and pinch tightly to seal.
  3. In a large pot, heat the remaining sesame oil over medium heat. Add minced garlic and ginger, sautéing for 1 minute until fragrant.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Carefully drop dumplings into the broth. Cook for 3-5 minutes or until they float to the surface.
  6. Ladle soup into bowls and garnish with sliced green onions.
