- 2 cups chicken breast, diced
- 1 cup smoked ham, diced
- 4 large Yukon Gold potatoes, peeled and cubed
- 1 cup heavy cream
- 6 cups chicken broth
- 4 tbsp unsalted butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat and sauté onions until translucent.
- Add minced garlic and cook for 1 minute until fragrant.
- Add diced chicken and ham, searing until lightly browned.
- Pour in chicken broth and scrape the bottom of the pot to release brown bits.
- Add cubed potatoes and thyme; simmer for 15-20 minutes until potatoes are tender.
- Reduce heat to low and stir in heavy cream slowly.
- Season with salt and pepper to taste and serve hot.
