Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen or canned corn
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium-high heat until fully cooked. Drain excess fat.
  2. Add diced onions and minced garlic, sautéing until soft and translucent.
  3. Stir in cumin and smoked paprika, cooking for 1 minute to release the aromas.
  4. Pour in beef broth and diced tomatoes. Bring to a boil, then simmer for 15 minutes.
  5. Stir in kidney beans and corn. Simmer for another 10 minutes.
  6. Reduce heat to low and stir in heavy cream. Heat through without boiling.
