- 3 cups corn kernels (fresh, frozen, or canned)
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled Cotija cheese
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons fresh cilantro, chopped
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- Salt to taste
Instructions
- Heat a skillet over medium-high heat. Add the corn kernels and cook undisturbed for 3-5 minutes until they develop a golden-brown char.
- Transfer the charred corn to a bowl and let it cool for about 5 minutes.
- In a separate medium bowl, whisk together the mayonnaise, sour cream, garlic powder, and chili powder until smooth.
- Stir in the fresh lime juice and lime zest until fully incorporated.
- Gently fold the cooled charred corn and crumbled Cotija cheese into the cream mixture.
- Fold in the chopped fresh cilantro.
- Taste and add salt if necessary. Serve immediately with tortilla chips or fresh vegetables.
