- 3 ripe avocados
- 1/2 medium red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt (plus more to taste)
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
Instructions
- In a small bowl, combine sliced red onions, apple cider vinegar, sugar, and 1/2 teaspoon salt. Let sit for 20-30 minutes to pickle.
- Cut avocados in half, remove pits, and scoop the flesh into a medium mixing bowl.
- Mash the avocado with a fork or potato masher until it reaches your desired consistency.
- Stir in the lime juice to prevent browning and add acidity.
- Fold in the chopped fresh cilantro gently.
- Drain the pickled onions from the liquid and fold them into the avocado mixture.
- Taste and add additional salt if necessary. Serve immediately or store with plastic wrap pressed onto the surface.
