- 1 lb shelf-stable potato gnocchi
- 1 lb Italian sausage (bulk or casings removed)
- 1 cup pumpkin puree (100% pure)
- 1/2 cup heavy cream
- 2 cups fresh baby spinach
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1 tbsp olive oil (if needed)
Instructions
- Brown the sausage in a large skillet over medium-high heat, breaking it into crumbles until fully cooked.
- Add the uncooked gnocchi to the pan with the sausage and fats. Cook undisturbed for 3-4 minutes until golden brown, then toss and cook for another 2 minutes.
- Push the mixture to the sides and add minced garlic to the center, sautéing for 1 minute until fragrant.
- Stir in the pumpkin puree and heavy cream. Reduce heat to medium and simmer for 5 minutes until the sauce thickens.
- Fold in the baby spinach and stir until just wilted.
- Stir in the Parmesan cheese and season with salt and pepper. Serve immediately.
