Description

A rich, one-pan dinner combining pan-seared gnocchi, savory Italian sausage, and a velvety pumpkin cream sauce with fresh spinach.


Ingredients

  • 1 lb shelf-stable potato gnocchi
  • 1 lb Italian sausage (bulk or casings removed)
  • 1 cup pumpkin puree (100% pure)
  • 1/2 cup heavy cream
  • 2 cups fresh baby spinach
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 tbsp olive oil (if needed)

Instructions

  1. Brown the sausage in a large skillet over medium-high heat, breaking it into crumbles until fully cooked.
  2. Add the uncooked gnocchi to the pan with the sausage and fats. Cook undisturbed for 3-4 minutes until golden brown, then toss and cook for another 2 minutes.
  3. Push the mixture to the sides and add minced garlic to the center, sautéing for 1 minute until fragrant.
  4. Stir in the pumpkin puree and heavy cream. Reduce heat to medium and simmer for 5 minutes until the sauce thickens.
  5. Fold in the baby spinach and stir until just wilted.
  6. Stir in the Parmesan cheese and season with salt and pepper. Serve immediately.
