- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup cocoa powder
- 1/2 cup all-purpose flour
- 1/4 tsp salt
- 8 oz high-quality dark chocolate, chopped
- 2 cups heavy whipping cream, divided
- 1/4 cup butter for ganache
Instructions
- Preheat oven to 350F and grease a 9-inch springform pan.
- Whisk melted butter and sugar, then stir in eggs and vanilla until smooth.
- Sift in cocoa powder, flour, and salt, stirring until just combined.
- Bake for 15-20 minutes until edges are set. Let cool completely in the pan.
- Heat 1 cup of cream until simmering, then pour over 6oz of chopped chocolate; stir until smooth and let cool.
- Whip the remaining 1 cup of cream to soft peaks and fold it gently into the cooled chocolate mixture.
- Pour the mousse over the cooled cake base and refrigerate for at least 6 hours.
- Melt the final 2oz of chocolate with 1/4 cup cream and a bit of butter to create ganache; pour over the chilled cake.
- Chill for another 30 minutes, then release the springform ring and slice with a hot knife.
