Description
A deconstructed version of traditional Polish cabbage rolls, this soup combines savory ground beef, tender cabbage, and fluffy rice in a rich tomato-beef broth.

- 1 lb ground beef
- 1 medium head of green cabbage, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup white rice, uncooked
- 3 tbsp tomato paste
- 6 cups beef broth
- 1 tsp paprika
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat and sauté diced onion until translucent.
- Add ground beef and cook until browned, breaking into small crumbles.
- Stir in chopped cabbage and cook for 8-10 minutes until slightly golden.
- Add minced garlic, paprika, and tomato paste, stirring for 2 minutes to cook out the raw taste.
- Pour in beef broth and bring to a boil, then immediately reduce to a simmer.
- Stir in uncooked white rice, cover, and simmer for 15-20 minutes until rice is tender.
- Season with salt and pepper and garnish with fresh parsley before serving.
