Description

A deconstructed version of traditional Polish cabbage rolls, this soup combines savory ground beef, tender cabbage, and fluffy rice in a rich tomato-beef broth.


Ingredients

  • 1 lb ground beef
  • 1 medium head of green cabbage, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup white rice, uncooked
  • 3 tbsp tomato paste
  • 6 cups beef broth
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté diced onion until translucent.
  2. Add ground beef and cook until browned, breaking into small crumbles.
  3. Stir in chopped cabbage and cook for 8-10 minutes until slightly golden.
  4. Add minced garlic, paprika, and tomato paste, stirring for 2 minutes to cook out the raw taste.
  5. Pour in beef broth and bring to a boil, then immediately reduce to a simmer.
  6. Stir in uncooked white rice, cover, and simmer for 15-20 minutes until rice is tender.
  7. Season with salt and pepper and garnish with fresh parsley before serving.
