Description
Soft, pillowy cookies made from a cake mix base. These are easy to color and decorate for Easter celebrations.

- 1 box (15.25 oz) white or vanilla cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- Gel food coloring (pastel colors)
- 1/4 cup festive sprinkles
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix the cake mix, eggs, and vegetable oil until smooth.
- Divide the batter if making multiple colors and stir in food coloring.
- Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing 2 inches apart.
- Press sprinkles into the top of each cookie.
- Bake for 9-11 minutes until edges are set and centers are no longer glossy.
- Cool on the pan for 5 minutes before transferring to a wire rack.
