Handheld buttery pastries filled with a juicy, cinnamon-spiced fresh peach filling. Perfect for summer snacking and easy to transport.

- 2 1/2 cups all-purpose flour
- 1 cup cold unsalted butter, cubed
- 1 tsp salt
- 4–6 tbsp ice water
- 3 cups fresh peaches, diced
- 1/3 cup brown sugar
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 egg (for wash)
Instructions
- Pulse flour, salt, and cold butter in a food processor until coarse crumbs form.
- Add ice water one tablespoon at a time until dough just comes together.
- Wrap dough and refrigerate for 60 minutes.
- Combine diced peaches, brown sugar, cornstarch, and cinnamon in a bowl.
- Roll dough to 1/8 inch thickness and cut into 4-inch circles.
- Place 2 tbsp filling on each circle, fold over, and crimp edges with a fork.
- Brush with beaten egg and bake at 400F for 15-20 minutes until golden.
