A comforting, savory twist on stuffed peppers using a slow cooker and omitting tomato sauce for a rich, beefy flavor.


Ingredients

  • 1 lb ground beef
  • 46 large bell peppers
  • 1 cup uncooked long-grain white rice
  • 1.5 cups beef broth
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet and drain the fat.
  2. Sauté diced onion and garlic until translucent.
  3. Combine beef, onion, garlic, and uncooked rice in a bowl.
  4. Stir in 1.5 cups of beef broth.
  5. Stuff the mixture into hollowed-out bell peppers.
  6. Place peppers in slow cooker and pour remaining broth around them.
  7. Cook on Low for 6-7 hours.
  8. Top with cheese 15 minutes before serving.
