A comforting, savory twist on stuffed peppers using a slow cooker and omitting tomato sauce for a rich, beefy flavor.

- 1 lb ground beef
- 4–6 large bell peppers
- 1 cup uncooked long-grain white rice
- 1.5 cups beef broth
- 3 cloves garlic, minced
- 1 small onion, diced
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet and drain the fat.
- Sauté diced onion and garlic until translucent.
- Combine beef, onion, garlic, and uncooked rice in a bowl.
- Stir in 1.5 cups of beef broth.
- Stuff the mixture into hollowed-out bell peppers.
- Place peppers in slow cooker and pour remaining broth around them.
- Cook on Low for 6-7 hours.
- Top with cheese 15 minutes before serving.
