A delicious hybrid of a shortbread cookie and a traditional pumpkin pie, these bars are easy to make and serve.

- 1.5 cups all-purpose flour
- 1/2 cup unsalted butter, melted
- 2 tbsp brown sugar (for crust)
- 15 oz pumpkin puree
- 1/2 cup brown sugar (for filling)
- 2 large eggs
- 12 oz evaporated milk
- 1 tsp ground cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F and line a 9×9 inch pan with parchment paper.
- Mix flour, melted butter, and 2 tbsp sugar; press into the pan and bake for 12 minutes.
- Whisk pumpkin puree and 1/2 cup brown sugar until smooth.
- Beat in eggs one at a time, then stir in evaporated milk and cinnamon.
- Pour the pumpkin mixture over the par-baked crust.
- Bake for 40-45 minutes until edges are set.
- Cool completely in the pan before slicing into bars.
