Description

A delicious hybrid of a shortbread cookie and a traditional pumpkin pie, these bars are easy to make and serve.


Ingredients

  • 1.5 cups all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 2 tbsp brown sugar (for crust)
  • 15 oz pumpkin puree
  • 1/2 cup brown sugar (for filling)
  • 2 large eggs
  • 12 oz evaporated milk
  • 1 tsp ground cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F and line a 9×9 inch pan with parchment paper.
  2. Mix flour, melted butter, and 2 tbsp sugar; press into the pan and bake for 12 minutes.
  3. Whisk pumpkin puree and 1/2 cup brown sugar until smooth.
  4. Beat in eggs one at a time, then stir in evaporated milk and cinnamon.
  5. Pour the pumpkin mixture over the par-baked crust.
  6. Bake for 40-45 minutes until edges are set.
  7. Cool completely in the pan before slicing into bars.
